Phillips Chicken Chesapeake

Ingredients

4 chicken breasts
1/2 lb. Phillips Backfin Crab Meat
1/2 lb. Phillips Jumbo Lump Crab Meat
¼ C. parsley, chopped
¾ C. Ritz crackers, crushed
1 large egg
¾ tsp. Worcestershire sauce
¾ tsp. lemon juice
¾ tsp. seafood seasoning
¾ tsp. Dijon mustard
½ C. mayonnaise
2 Tbsp. pimentos, chopped, if desired
Flour seasoned with Phillips Seafood Seasoning
Melted butter


Preparation Instructions

1. Preheat oven to 350 degrees F.
2. Combine the egg, Worcestershire sauce, lemon juice, seafood seasoning, Dijon mustard, and mayonnaise in a bowl.
3. Place the crab meat, parsley, and Ritz crackers into a separate bowl. Mix very lightly to combine.
4. Add the wet ingredients to the crab mixture and combine lightly.
5. Carefully use a knife to make a "pocket" in each chicken breast for the crab stuffing.  Portion a mound of crab filling in the middle of each pocket and fold over to close.
6. If desired, add stuffed breasts to preheated grill pan to mark exterior before baking.
7. Place stuffed breasts into a casserole dish or deep baking pan. Season to your liking with seasoned flour and pour melted butter over top of each chicken breast.
8. Bake at 350 degrees F for 20-25 minutes, or until chicken is cooked to an internal temperature of 165 degrees.

This recipe turned out great for me! I made a couple of substitutions-- used Club crackers and Phillips Blackening Seasoning instead of the called for ingredients-- to use what I had on hand in the pantry. The crab filling helped keep the chicken very moist while baking.

I made this for Valentine's Day. It was super easy to make, thankfully using basic ingredients within the house. Everyone loved it and I was actually surprised myself at how great it tasted. Even a beginner cook could successfully make this! We did add extra Old Bay but that was because its our own preference. Otherwise it was perfect.

This is TERRIFIC! I live on the Chesapeake Bay and am very picky about putting crab in anything, because I just want to eat the crab, frankly! Thought I'd give this recipe a try (we had company) and I am so glad I did. Delicious, delicate, elegant. The crab is honored!

Awesome, huge crowd pleaser. Easy to make, used jumbo lump only. Also added McCormick's packet Crab Cake Classic Mix. YUM.

Awesome, everyone loved this. I used jumbo lump meat. I lightly grilled the chicken on a George Foremen grill. My daughter in law said she loved it. It is her favorite meal to buy in Cambridge Md. (she was raised there).
