Ingredients

1 lb. Phillips Crab Meat (lump recommended)
2 Tbsp. unsalted butter
1 Tbsp. olive oil
2 stalks celery, finely chopped
1 cup sweet onion, finely chopped
4 medium size sweet red peppers, seeded and finely chopped
4 medium size jalapeno peppers, seeded and finely chopped
4 medium size chipotle peppers, seeded and finely chopped
2 medium size garlic cloves, minced
2 medium size russet potatoes, peeled and diced into 1/4-inch cubes (about 1-pound)
1 1/2 cups fresh or frozen corn kernels
4 cups chicken broth or vegetable broth
2 tsp. Cajun seasoning
1 1/2 tsp. celery seeds
1 1/2 tsp. cumin seeds
1 tsp. smoked paprika
1 tsp. freshly ground black pepper
1/3 cup plain bread crumbs
12 oz. can evaporated milk
1/3 cup crispy tortilla strips (for garnish)
1/4 cup celery or cilantro leaves (for garnish)
3 Tbsp. fresh chives, finely chopped (for garnish)

Cooking Instructions
  • Heat butter and olive oil in a large stock pot or Dutch oven, over medium heat.
  • Add celery and sweet onions and cook for 2 minutes, or until partially cooked, toss and turn to stir vegetables as needed.
  • Add sweet red peppers, jalapeno peppers, chipotle peppers and garlic and cook an additional 2 minutes longer, or until vegetables are almost tender, toss and turn to stir vegetables as needed.
  • Stir in to add potatoes and cook an additional minute. Then add corn, chicken or vegetable broth, Cajun seasoning, celery seeds, cumin seeds, smoked paprika, ground black pepper and bread crumbs.
  • Cook till chowder comes to a boil, about 5 minutes, stirring as needed.
  • Reduce heat to low. Add evaporated milk and lump crab meat (reserve 1/2 cup of crab) and let chowder simmer an additional 4 to 5 minutes, stirring occasionally as needed.
  • Assemble and serve chowder.
  • Add six even portion ladles of Cajun Crab Chipotle Corn Chowder into each six individual serving bowls.
  • Garnish over top of each, with an even portion of the remaining reserved 1/2 cup lump crab meat, tortilla strips, celery or cilantro leaves and fresh chives. Serve and enjoy.
