Ingredients

1 cup Phillips Lump Crab Meat
3 Ripe Avocados
1 large Shallot, diced
1 Tbsp. Pickled Jalapeño Peppers, minced
1 clove Garlic, minced
1 tsp. Cumin
3 tsp. Kosher Salt
1/2 tsp. Cracked Black Pepper
1/2 tsp. Cayenne Pepper
Juice & zest of 1 Lime
1 package Wonton Wrappers
2 cups Canola Oil
Fresh Herbs for Garnish (whatever looks best at the market that day)

Cooking Instructions
  • Remove flesh from the avocados and mash with a fork. Add the shallot, jalapeño, garlic, cumin, 1 teaspoon salt, pepper, cayenne, lime juice & zest.
  • Mix thoroughly to combine. Gently fold in the crab.
  • Remove wonton wrapper from packaging and cut each on the diagonal, making them into triangles.
  • Heat oil in a heavy bottomed pot to 350 degrees.
  • Fry wonton wrappers a few at a time until golden brown (about 15-20 seconds), then immediately sprinkle with remaining salt.
  • Spoon crab guacamole onto wonton crisps, garnish with fresh herb and serve.
