4 large onions, sliced
1/4 cup butter
6 medium potatoes, cubed
1 Tbsp. salt
1/2 tsp. pepper
1 & 1/2 cups milk
2 cups grated sharp cheddar cheese
3 Tbsp. chopped parsley
1 cup boiling water
