Ingredients

2 lbs. Phillips Crab Meat
4 large onions, sliced
1/4 cup butter
6 medium potatoes, cubed
1 Tbsp. salt
1/2 tsp. pepper
1 & 1/2 cups milk
2 cups grated sharp cheddar cheese
3 Tbsp. chopped parsley
1 cup boiling water

Cooking Instructions
  • In Dutch oven, saute onion slices in butter until tender.
  • Add boiling water, potatoes, salt and pepper, then simmer (covered) for 20 minutes or until potatoes are soft. Do not drain.
  • In a separate pot, heat milk and cheese until cheese is melted and milk is hot. Do not boil.
  • Add crab to potatoes and heat until crab is hot.
  • Add hot milk mixture to potatoes and crab, heat but do not boil.
  • Garnish with parsley and serve.
