16 oz. Street Carts Red Curry Sauce
½ cup peanut butter
1 pack egg noodles or 2 cups rice
1 lb. mahi mahi fillet
1 Tbsp. light soy sauce
2 Tbsp. vegetable oil
½ lb. broccoli
¼ lb. snow peas
½ cup roasted peanuts
3 sprigs green onions
1 medium red pepper, cored and diced

Cooking Instructions
  • Cook noodles according to package directions.
  • Cut fish into 2 inch pieces and marinate in soy sauce.
  • Place Street Carts Red Curry Sauce in a pan over medium heat, stirring occasionally. Gently stir in peanut butter.
  • Sauté broccoli, snow peas, peanuts, spring onions and ¾ of the red pepper in a wok for about 3-4 minutes over high heat. Add to curry.
  • Sauté fish in hot oil for 3-4 minutes. Add to curry. Reduce heat to low and simmer for an additional 10 minutes.
  • Serve over egg noodles. Garnish with remaining red pepper.
